It’s beginning to feel a bit more like fall, and I don’t know about you, but I am definitely craving more pumpkin, apple, and cinnamon flavored foods! 

Take this as a reminder to enjoy your favorite fall foods with ease instead of guilt this year. You deserve to fall in love with the act of cooking yourself a meal and feeling completely satisfied afterwards.

I wanted to share with you a delicious pumpkin pancake recipe I found when thinking about pumpkin pie during breakfast time. Since I didn't have pumpkin pie, I thought this was a great option! Below are all the ingredients you will need.

Pumpkin Pancakes

  • 1 ½ cups milk or milk substitute

  • 1 cup pumpkin puree (fresh or canned)

  • 1 egg

  • 2 tablespoons vegetable oil

  • 2 tablespoons vinegar

  • 2 cups flour

  • 3 tablespoons brown sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon ground allspice

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground ginger

  • ½ teaspoon salt
