Chocolate Zucchini Muffins

Are you craving something sweet? I don’t know about you, but I am a HUGE chocolate person. I crave sweets almost daily! My mom cooks and bakes all the time, so thankfully there’s always a new snack to try! Recently my mom has been experimenting with incorporating zucchini into our sweets. At first, I was like “Eww..why??” But after I tasted these chocolate zucchini muffins, my mind COMPLETELY changed. The zucchini of course is great to make your muffins more nourishing, but they also make your muffins so moist, you will never want to eat them a different way! The most amazing part is that it’s very likely you will have the majority of these ingredients at home already!

Here is the recipe:

●      ½ vegetable oil

●      1 ½ tsp. baking soda

●      1 tsp. salt

●      1 cup brown sugar

●      1 tbsp. Vanilla extract

●      2 cups all purpose flour

●      ½ cocoa powder

●      3 cups finely shredded zucchini (NOT drained!)

●      & finally, 1-2 cups of chocolate chips (Whatever your heart & stomach desires!)

 

Blend all of the ingredients generously, pop in some buttered muffin tins, and bake at 350 degrees for 25-35 minutes!

Mamas, try baking these with your children! They’re super easy, not too messy, and may intrigue your children to try new things! Cooking and baking with my mom at a young age was not only fun but taught me that ALL food groups can taste really yummy & nourishing!
